Pineapple Pecan Cake Homemade Larabars

I was sitting at the Shabbos table Friday night when my friend brought out dessert: organic unsweetened dried pineapple slices.

Like any normal person foodie, my first thought when I bit into a slice is this would make an awesome bar.

Now, I can not admit to daydreaming at the dinner table.



now that is another story.

Since Friday, I have not been able to get this idea out of my mind.


after a run to the health food store & a day with my food processor,

Pineapple Pecan Cake Homemade Larabars


  • 3 dried pineapple rings (approximately 1/4 cup)
  • 1/4 c. raw pecans
  • 1/4 c. medjool dates
  • 1/8 c. warm water

The “How-To”:

Slice the medjool dates in half and take out the pit (check for bugs).

Push the dates back together and place in a bowl with the pineapple rings. Pour over the 1/8 c. warm water. Let soak for at least  5 minutes.

Process the entire mixture in your food processor. *For a less moist bar, drain out liquid.  Add in pecans and process until the mixture forms. Scrape into a bowl, cover airtight, and refrigerate.  Once cool, the mixture will be less sticky.

Roll out and shape with parchment paper.

Look at that texture from the pineapple and pecans!

I formed the mixture into a rectangle and then cut it into half.

Store air-tight (in 2 snack bags) in the refrigerator.

Two moist & delicious pineapple pecan cake bars.

No baking, added-sugar, or flour.

Lots of tangy & sweet flavor.

I guess recipe-dreaming at the table is not that bad ;)
