I can not believe that it has been nearly a week since my last post.
This can only mean that one thing has yet to change….
I have a feeling that Chicago Will Continue to Play With My Emotions.

Sipping a Latte & Devouring Chocolate Chip Banana Coconut Pancakes…good.

Individual Chocolate Chip Banana Coconut Pancakes
Ingredients – Adapted from Chocolate Covered Katie
- 1/3 cup whole wheat flour
- 1 tsp baking powder
- dash of salt
- 1/2 mashed ripe banana
- 1/2 tsp pure vanilla extract
- 1/2 – 3/4 cup light coconut milk (carton, or unsweetened almond milk) – depending how thin you would like the pancakes
- 1/8 cup of dark chocolate chips
- 1/8 cup of shredded coconut (optional)
- 1/2 of banana sliced (optional topping)
- 100% Maple Syrup (optional for topping)
Mash the banana. Then, stir in the vanilla and light coconut milk (or your choice of milk).
In another bowl, mix the flour, dash of salt, and baking powder together. Add the dry ingredients slowly into the wet banana mixture, stirring.
Add dark chocolate chip and shredded coconut, if desired to the batter.
Slightly spray your pan with oil and your only a few minutes away from….
Go ahead, dig in.
If you are like me, you may leave some of your fill-ins to use as a topping, with a drizzle of maple syrup!
