75 degree weather in March? In Chicago?? Growing up, I remember snow in March! No better way to take advantage than to spend the day outside with my Mom.  After taking a 40 minute walk around a scenic park, nothing says “thanks Mom for spending the day with me” than a surprise picnic lunch.

Quick & Easy Picnic Salad for 2

To Go Container:

Romaine Lettuce

1 Avocado (1/2 in each salad)- salted & peppered

1 Orange Pepper (1/2 in each salad)

2, 1 inch cubes of Feta cheese

2 squares of West Soy – Baked Tofu – Asian Teriyaki (I buy this marinated and baked tofu at Whole Foods. Take 2 squares out from refrigerated packaged and cut into cubes. 100 calories per square)

**Place a paper towel over your salad to absorb the moisture and keep it fresh & crisp. Close up and keep cool on ice packs.

With so many healthy options, I usually base my salads on what I have in my kitchen. Just remember, if you are going to add dressing or toppings, pack them separately. For example, I packed a snack bag of sliced almonds to top my salad.

Don’t forget:

  • Napkins
  • Forks
  • Hand Sanitizer
  • Drinks
  • Dressing/ Balsamic Vinegar
  • Snacks
  • Cut up fruit
  • Paper towels in-case the table isn’t in tip-top shape:)
