Grilled Cheese Gone “Avo-Pita”

Pesach is over…Chametz time (!!)

But, Chametz time doesn’t have to mean eating unhealthy simple carbohydrates. This is a perfect time to only buy the foods that you and your family should be eating.

Some inspiration?

My favorite variation of the grilled cheese.

Stuffed with avocado. Meaning, your grilled pita is also stuffed with:

  • Healthy mono-saturated fats that lower cholesterol
  • Approximately 30% more potassium than bananas (!!!)
  • Vitamins A, C, E, K and B6

Forget the supplements, eat real food. It’s delicious.

Grilled Whole Wheat Avocado Cheese Pita

It’s crunchy like a chip on the outside & oozing cheese, onion, and avocado in the middle.

Ingredients

  • 1 Whole Wheat Pita (100 calories)
  • 1/2 Ripe Avocado
  • 1 Slice Mozzarella Cheese
  • Olive Oil Spray
  • Salt and pepper to taste
  • Optional: Chopped white or red onion

Spray a stove-top pan


Cut an pocket into the whole wheat pita and put the slice of mozzarella cheese in the opening.

Cut the ripe avocado into half.

Cover the half with the pit still attached (airtight) and place in the refrigerator for tomorrow’s grilled pita.

Slice the pit-less avocado side inside the skin. Pepper & salt to taste. Then, spoon the half of avocado into the pita on top of the cheese.

(Optional) Chop onion and put on top of the avocado. Close the pita and grill on olive oil sprayed pan over medium heat on both sides until golden brown and cheese is melted.

Crunch away!

**Tip: Buy a package of fresh whole wheat pitas and store in the freezer. When ready to use, heat in the microwave for 25 seconds or let defrost at room temperature for an hour.
